Pansit Bihon (guisado)

Ingredients :

1 lb pancit bihon (Rice Noodles)
1/2 lb chicken, cooked, deboned, and cut into thin slices (you can also add pork meat)
1 cup carrot
1/2 small cabbage, chopped (you can also add snow pea,celery leaves)
1 medium sized onion, chopped
1/2 tbsp garlic, minced
1 pc chicken cube
5 tbsp soy sauce
3 to 4 cups water
Pepper

1. In a large pot, Saute the garlic and onion
2. Add the chicken then let cook for a few minutes
3. Put in the carrots and cabbage then simmer 3 mins
4. Add the chicken cube once dissolved and mixed, add the water then simmer for 15 minutes
5. Remove all the vegetables and meat in the pot (set aside) and leave the liquid
6. add the soy sauce
7. Add the pancit bihon (make sure to soak the noodles in the water for 10 minutes)
8. Mix and wait until the pansit bihon have absorbed all the liquid.
9. Add the vegetables and meat that were previously cooked
10. Add pepper, mix well and simmer for a minute
